
Turkish menus can look unfamiliar when you first arrive in Istanbul. A few simple explanations make ordering much easier, especially around Sultanahmet and Cankurtaran where many visitors are discovering the cuisine for the first time.
Kebab
Kebab is a broad family of dishes. Adana and Urfa are minced-meat kebabs, while şiş refers to meat cooked on skewers. Patlıcan kebabı combines meat and eggplant, and yoğurtlu kebab is served with yogurt and a rich sauce.
Pide
Pide is a baked flatbread that can be topped with meat, cheese or other ingredients. It is often easy to share and is a useful choice when a group wants something different from grilled meat.
Meze and salads
Meze are small dishes designed for sharing. Depending on the restaurant, you may find yogurt-based dishes, eggplant, greens, onions or other seasonal preparations.
Lentil soup
Mercimek çorbası, or lentil soup, is a familiar Turkish starter and can be a good option when you want something lighter before a main dish.
Baklava and Turkish tea
Baklava is a layered pastry dessert served with syrup and usually enjoyed in small portions. Turkish tea is served in a small tulip-shaped glass and is a natural way to finish a meal.
